cis-3-Hexen-1-ol, abbreviated as (Z)-3-hexen-1-ol is known as leaf alcohol. Leaf Alcohol is a very important aroma ingredient and is one of the most popular fragrance Ingredient in F&F industry. It has powerful green note resembling fresh Green Grass. In small amounts it gives top-notes of floral fragrance like Lilac. In Flavor formulation, it adds sweet green note to all fruit flavors like Paech Apple & Pear. It is a colorless oily liquid with an intense grassy-green odor of freshly cut green grass. Leaf alcohol also has been recognized as a semiochemical.

cis-3-Hexen-1-ol is an alcohol and its esters are also important flavor and fragrance ingredients.

Also, the leaf aldehyde, which is cis-3-Hexenal has stronger smell but is unstable.

It is traditionally manufactured from Sorbic alcohol by using Chromium catalyst for hydrogenation. Hexavalent Chromium is now classified as highly toxic, Carcinogenic and environmentally hazardous in nature, hence, this catalyst in now not preferred at all creating a shortage for leaf alcohol worldwide and scrambling for availability while the price has been spiralling upwards.
